Thesis: Athens’ triple placement in the World’s 50 Best Bars 2025 is more than just a win; it’s proof that the Greek capital has become Europe’s most dynamic cocktail city, weaving together technique, local ingredients, and hospitality into a distinct identity.
Announced on October 27 in Hong Kong, this year’s list features Line at No. 8, Baba au Rum at No. 27, and The Bar in Front of the Bar at No. 47. In an industry long dominated by London, New York, and Barcelona, Athens’ success is both a sign of recognition and an indicator of future potential. The city’s bar scene is thriving, and it clearly has more to achieve.
Why Athens is winning now
The city’s top teams use Greece as both their inspiration and their supply chain. Greek botanicals, olive oil, and seasonal produce are the foundation for precise, modern techniques, while the service remains warm and approachable. The outcome is focused on clarity rather than spectacle, featuring elegant glassware, high-level kitchen prep, zero-waste principles, and drinks that truly reflect their origin.
The three pillars
Line (No. 8): A project in Kato Petralona focused on research, development, and a circular economy. Fruit wines (called Why-ins) are made with winemaker Thanos Georgilas, while house beers and sourdoughs allow leftovers to be repurposed into cocktails. It shows that sustainability can be inspiring, not preachy.
Baba au Rum (No. 27): A fixture of the Athens scene since 2009, offering over 400 rums and a worldly feel. Its eleven straight appearances on the list and the Rémy Martin Legend of the List award establish it as both a keeper of the city’s bar history and a connection to the global scene.
The Bar in Front of the Bar (No. 47): What started as a temporary setup is now a permanent, minimalist counter that values classic cocktails, seasonal ingredients, and a zero-waste approach. It proves that simplicity has universal appeal.
The global context
Asia’s growing influence was confirmed with Hong Kong’s Bar Leone taking the No. 1 spot. The 2025 ranking covers 29 cities and includes new entries from Bratislava, Tirana, and Guangzhou. The top ten strikes a balance between experimental, lab-driven concepts and friendly neighborhood spots, highlighting a simple truth: excellence comes from great execution, not rigid rules.
What it means for Athens
For the Attica region, these three listings generate cultural influence, attracting higher-spending tourists and driving year-round travel. They also create jobs in farming, baking, and distilling, while the training standards help elevate the entire industry. Just as importantly, Athens is exporting a set of ideas-like using Greek botanicals and circular processes-that others are now looking to adopt.
Methodology, with caveats
The voting Academy is made up of over 800 industry experts from 29 regions. Each member can cast up to eight votes for bars they have personally visited in the last 18 months. Voters with financial ties to bars are not allowed to participate, the ballots are kept anonymous, and the entire process is audited by Deloitte. Despite these measures, the ranking is still subjective – it is an expert opinion poll, not a scientific analysis.
Bottom line: Athens has successfully transitioned from an “emerging” to an “established” destination, all while maintaining its creative spirit. While 2025 may have highlighted a new center of gravity in Asia, Athens offered a compelling alternative: a city that turns heritage into innovation and transforms a simple night out into a form of cultural expression.
